In open world games, one of my favourite things to do is watch NPCs going through their daily routines. Usually they don't actually have daily routines, or even hourly ones, so it's not always a fulfilling pursuit, but seeing the limits of the AI can be fun in and of itself.

Watch Dogs 2 [official site] is good at creating little stories. It starts when you scan somebody's phone and learn a little fact about them, and see what they do for a living and what their income is, and it sometimes ends...well, horribly. Here's one such story.
